π INGREDIENTS:
β¨Wet Ingredients:
- 3 eggs
- Β½ cup of oil
- 1 teaspoon of Christmas bread essence or orange blossom water (or a dash of rum or vanilla essence)
- Β½ teaspoon of orange essence or zest of 1 orange (optional)

β¨Dry Ingredients:
- 1 cup (125g) of almond flour (or other flours if not avoiding flour. Almond flour is ground almonds, a nut, not a carb!)
- 1 cup of erythritol (or 3 tablespoons of stevia, sucralose, or your preferred sweetener)
- 1 tablespoon of xanthan gum (gives fluffiness to gluten-free doughs and is available in health food stores; if unavailable, omit it)
- 1 teaspoon of baking powder
- A pinch of salt
β¨Filling and Topping:
- 100g of sugar-free chocolateΒ
- 100g of almonds or nutsΒ
π₯£ INSTRUCTIONS:
1. Beat the eggs until foamy. Add the sweetener while continuing to beat. Then, mix in the other wet ingredients well.
2. Gradually incorporate the dry ingredients, being careful not to deflate the mixture.
3. Add the chocolate and almonds.
4. Cook in an 18cm Essen pot on a crown fire for 20 minutes, or in a small mold or Christmas bread mold at 180ΒΊC (356ΒΊF) for 35 minutes.
5. Cover with melted chocolate and nuts or your favorite toppings and it's ready to enjoy! π
