Healthy 2-Minute Chocolate Lava Cake

📝 INGREDIENTS:
- 1 egg (can be replaced with ½ banana or 2 tablespoons of peanut butter + a splash of plant-based milk)
- 1 tablespoon (15g) of unsweetened cocoa powder
- 2 heaping tablespoons (40g) of oats or oat flour (you can use almond flour for a lower-carb option or any gluten-free flour)
- 1 teaspoon of stevia or any liquid sweetener (you can use 3 tablespoons of sugar if not making it sugar-free)
- 1 teaspoon of vanilla essence
- 1 square or bar (50g) of unsweetened dark chocolate
🥣 INSTRUCTIONS:
1. Blend all ingredients except the chocolate square and transfer to a microwave-safe mold or cup lined with parchment paper for easy unmolding.
2. Place the chocolate square in the center and use a stick to push it down so that it's submerged in the mixture but not touching the bottom.
3. Microwave at full power (800W) for about 30 seconds, then another 30 seconds.
🙌🏻 You can also make it in a conventional or electric oven in an oiled mold or with parchment paper at 220ºC (428ºF) for 8 minutes or until it's firm on top and the edges.
4. Wait 30 seconds, place a plate over the mold or cup, and flip it to unmold. Dust with unsweetened cocoa and serve alone or with your favorite accompaniments!
